Today is Pi DAY which means it is also pie day at our house.
This year, instead of making a dessert pie I made mini breakfast pies.
These were quick and easy and a great way to use up what we had on hand. I only had one sheet of puff pastry so I made 4 squares which was perfect for the two of us.
Each one was a little different which gave me chance to experiment with the toppings such as cheeses, herbs, meats, etc.
Mr. Wonderful wasn't keen on them which was no surprise however I thought these pretty little pies were wonderful and would make them again in a minute.
It was also a fun and simple way to celebrate Pi Day.
