Classic Carrot Cake

Last Saturday I had fun baking up a storm for Easter dinner. 
There were so many things that sounded good that it made it hard to narrow down the menu but for the most part this is my traditional menu, with the exception of a couple new additions.
Here is what I finally decided on:
I think spring and carrot cake are a perfect match so...

...I made this 3 layer

to serve along with the other yummy desserts on the menu which I will be posting over the next few days.

J & C's Kitchen Makeover ~ PART 7: Glass Cabinet

The DIY kitchen makeover is almost finished!

This is the last cabinet
and it was installed
on Wednesday. 
The part that amazes me most about installing this cabinet is that my hubby lifted, leveled and screwed it in all by himself. That in and of itself is hard to believe and, on top of that, no broken glass.
He's our hero!
Now all that is left to be finished is attaching these cute door knobs, 
a little trim work, the under cabinet lighting and the lights inside the glass cabinet. J & C's kitchen should be finished soon!

Gluten Free Sunday's

Sunday's are typically the day I take the gluten free challenge and attempt to prepare as much of our Sunday Supper gluten free as possible. I try new GF recipes and also convert my favorite recipes by substituting GF products, which is what I did last Sunday for two of the desserts. For the individual blackberry cobblers I cut down one of my recipes, way down, so that it only made two small cobblers since I also made a large Blackberry cobbler { not pictured } using a different recipe and standard ingredients. I was very pleased with how all the desserts turned out.
Our main course was prime rib cooked on the Traeger® along with vegetable skewers and beer bread. We were treated to a wonderful gluten free Pear & Kale salad which was a perfect addition to our meal. 
Sunday Supper was delicious!

Post-it Note art ~ doodle challenge

This little project was the result of boredom during an hour long "hold" on a traditional telephone, the old fashioned type that is connected to cords. After listening to the same playlist several times through I started looking around for some doodle inspiration. The only items within reach, due to the length of the stretchy handset cord, was a blue pen, a very old pair of large dull metal scissors and Post-it® brand notes in two sizes; 3" and 1-1/2" with only a few colors in each size but before long I was doodling, then cutting and finally sticking my shapes on a piece of copy paper. Within a short time a cheerful little flower garden had blossomed. I even added a small pink and yellow banner along the top { which isn't shown }. A fun, colorful doodle challenge which also just happens to be my first attempt at Post-it® note art.

Chocolate Cake { gluten free ~ cake mix }

Last weekend for Sunday Supper I wanted to try using a gluten free cake mix as a comparison and possibly an occasional alternative to making gluten free cake from scratch. Surprisingly, there were very few GF cake mix choices at the particular market we stopped at, in fact, I could only find one brand so there was not a lot of comparison involved which meant 
the only decision I was really faced with was whether I should make a 
double layer cake or cupcakes.  
Such a sweet brand name and cute packaging!
The cake was very easy to make and turned out perfect. Since I was going the easy route with this cake I decided to make "7 Minute Frosting" which is no fuss and tastes great. 
Everyone loved the cake so I would say it is a winner!  I will definitely be picking up another one of these cake mixes to have on hand for those occasions when I need a quick gluten free dessert.
