Last week Miss E was home for a visit which is always fun and often busy. Besides work, there are usually appointments, some shopping, dates with family and friends and lots of cooking. It is a great time to make some of the special recipes that are saved just for such an occasion and also justifies an increased amount of homemade sweet treats, at least the way I look at it. No matter who is cooking we are usually all in the kitchen together preparing something yummy at meal time just as we did one night last weekend, however, this time Miss E was in~charge.
She had a Braised Chicken recipe she wanted us to try so she was the cook and I was her sous~chef which is always fun. She started by heating up some butter along with a sprig of rosemary while I began preparing the sides.
Once the butter was hot she browned the chicken.
Then added red wine and let it simmer. After cooking a while longer she took each piece out and wrapped them in prosciutto and then returned them to the pot to finish cooking.
Her braised chicken was so easy to make, looked beautiful and tasted great. It is no wonder she likes it so much.
What a special and delicious dinner. You can be sure this has been added to our list of favorites and will be making this again soon.
