mixed berry french toast

Last Saturday for breakfast I created this mixed berry french toast. It is hard to tell in the photos but there are actually two pieces of french toast on each plate which are made with slices of Brioche bread dipped in a rich egg batter and grilled until golden brown. A sweet mascarpone filling is spread between the layers of french toast and the top is covered in a warm mixed berry compote with a dollop of sweetened whipped cream. It took a little time to get all the layers prepared but it was completely worth the wait!

Peanut Butter Cup Cupcakes

I made these fun cupcakes yesterday afternoon to take to our weekly Tuesday night dinner. 
I also made a Blueberry Cream Cheese Pie to take as well however by the time I finished all of the baking it was time to go which meant no time to get pictures of the pie. Don't get me wrong, the pie turned out great but was not nearly as festive as the cupcakes so naturally I  chose the cupcakes to take a few quick photos of before rushing out the door.
Easy peasy and so cute, if I do say so myself!

Lemon Cupcakes { gluten free }

These are great gluten ~ free Lemon Cupcakes. They are easy to make and bursting with lemon flavor.
I decorated the tops with a pinch of lemon zest for a bit of extra color and some yellow sprinkles to give them a little sparkle.
This recipe makes a dozen regular sized cupcakes so you'll want to double the recipe if more are needed.
