Meals on Heels ~ August delivery

Last weekend we delivered a new batch of homemade meals and sweet treats to the folks and restocked their freezer with a little more
“lovin’ from the oven”.
Dessert First is my motto!  So lets start there….
Our youngest son was home for P&B’s wedding so I had baked some of his favorite sweet treats during the week he was here. The full recipes made too much for the three of us, especially so close to the wedding, so I planned ahead and saved a portion of all the goodies and wrapped them up for our meal delivery. 
Also, some dessert from P&B’s wedding was a must on the delivery list.
Along with the sweet treats we also packed up some banana bread, several types of soup, pasta sauce and a variety of casseroles to choose from. All of which were packaged for two and freezer ready.
And, to top it off, we took them a bouquet of P&B's Wedding Flowers! It turned out to be an extra special delivery this time.

More Freezer Meals

We have been busy cooking as always, however, we are now freezing our meals too. 
We have been delivering meals for one reason or another since last fall. Some meals are delivered hot from the oven and ready to eat and others meals are delivered frozen to use when it is convenient. Once meal delivery became part of our routine it was easy to remember to make double and then package up a portion for Meals on Heals or freeze it for our Bake & Take meals.
This was one of our recent deliveries.
A few items were not frozen and delivered fresh instead.
For the most part though, these items were frozen such as these baked beans...
...and bread.
Meals to give away and some for us. It doesn't get easier than that.

Meals on Heels ~ Ribs, Baked Beans & more

This Bake & Take meal for four turned into a meal for only one on the day of delivery this week due to some unforeseen circumstances. 
As soon as we received the news we offered to deliver the meal in spite of the change in plans and just reduce the portion size. We got the go ahead and then packed up large single servings of each dish to assure some leftovers for another meal or at least some hardy snacks. 
We had more than enough for two families so there was plenty leftover for our dinner plus some extra which we boxed up for another care package.
Thankfully it all worked out in the end and a smaller version of the meal was delivered after all.

MEALS on HEELS :: Bake & Take ~ chicken dinner x’s 2

It was our turn again to Bake & Take a meal to our friends. As always, we make double of everything so that when were are finished cooking we have a meal for delivery and one for us. It works out great. Once all the food is ready to go we box it up and take it over however this week  I delivered it myself which the hubs dubbed Meals on Heels. Since they live right next door we just walk it over however this week he happened to have another commitment at delivery time so I was on my own, thus the new name Meals on Heels. 
The hubs had plenty of time before he had to leave to smoke some chickens which is one of our favorite ways to cook them. 
While he was at it he made three so we would have plenty of extra for other meals during the week.
In the meantime, I made a double batch of moms baked beans which are always a winner.
Company potatoes sounded good so a double batch of those were on the menu as well. 
Some warm from the oven homemade rolls were baked just before delivery.
And, little containers of homemade strawberry jam and homemade honey butter were tucked in as well. There is nothing better than either one of those slathered in the middle of one of the warm rolls. YUM.
A colorful marinated Corn Salad rounded out the meal.
It is always hard to decide on what to make for dessert but Poppyseed Layer Cake seemed to stand out. It had been awhile since I had made it and since all the ingredients were on hand it seemed like a good choice. 
It is usually a three layer cake however this time I switched it up and made a two layer cake to give away and single layer cake for us. It worked out perfect. 
There were a lot of delicious dinner leftovers which made the weeks meal planning easy. So, preparing double is actually less work for a lot of gain which is always a good thing!

Bake & Take :: Chicken dinner x's 2

Just popping in with a quick post about our latest Bake & Take meal that we delivered this week. Miss E was here and helped prepare and deliver this dinner which was lots of fun.
As is usually the case during the holidays, there was a lot going on in our kitchen including some serious baking. Cookies, candy and desserts were in progress while at the same time we worked on our special dinner to deliver. It was loads of fun and it all worked out. We walked the dinner over right on schedule and were back in no time to enjoy our duplicate dinner which was still hot. A fun day!

Taco’s with a Twist x 2 = easy

Last week I made two Taco Bake dinners, one for our neighbors and one for us. 
As you can see already, these are not your typical tacos. Instead of using taco shells to hold the meat and fillings I lined a pie plate with homemade bread dough. 
While the Taco Bake dough was rising I began cooking the taco meat and also made a colorful salad and some homemade Avocado Salad Dressing which I assembled in a clear bowl. Since it is getting close to Halloween and this meal was being delivered to our friends who have young kids I decided to add a little Olive Spider to the top of the dressing just for fun.
Once the dough had doubled I topped it with the cooked seasoned hamburger and put it in the oven to bake. When the edges began to turn golden brown I took it out and covered the top with cheese which melted over the meat. 
My idea for the salad, which actually has more lettuce hidden below the toppings, was that it could either be tossed with the dressing or could be used as toppings for the Taco Bake. The Taco Kit was ready to go. 
To complete the meal I baked a pan of Apple Squares. I considered Apple Empanadas but settled on Apple Squares instead because they are quick and easy and so good. I drizzled some icing over the top which looked a bit like a spiderweb so I could not resist adding a plastic spider to the dessert as well. 
As my family knows I love a theme, even at meal time. So spiders it was.

Meal Delivery ~ medically restricted diet...Part 1

I am finally back after a month long hiatus and hopefully returning to a more normal routine. A big thank you to my faithful followers and all those who continued to check for new posts while I was away. June was packed full of planned celebrations as well as unexpected events which all required our full attention. I did, however, manage to take photos along the way and have some June projects to share this month if all goes as planned. 

I thought I would start with this special meal we delivered this week to a dear friend who is currently having chemo treatments. She is on a restricted diet consisting of all organic food, high protein, low carb, select green vegetables and no sugar. After looking through lots of recipes I finally decided on a menu that I thought would work and baked some chicken breasts in a flavorful lemon, garlic, wine sauce served with a green arugula salad, fruit rolls and mixed fruit parfaits for dessert. Unfortunately I was interrupted by another medical emergency and forgot to take a picture of the chicken. Thankfully our emergency was resolved and the dinner was delivered.  
Arugula Salad with Brussels Sprout, Grapes, Apples and Balsamic Vinaigrette.

Fruit Rolls with Honey Lime dipping sauce.

Blueberry/Strawberry Fruit Parfaits with honey sweetened Mascarpone Cheese Mousse.

Of course, I made enough for us too...YUM!
