Parmesan Crusted Tilapia

This is one of our easy one pan dinners. Not only is it quick to make but it tastes just as great as it looks. Honestly, there is really not much to it.
The fish is coated with a mixture of Parmesan and Panko and then sprinkled with assorted seasonings.
 An array of vegetables are placed on top. We use whatever is on hand.
And then it is baked at 400℉.
In about 30 minutes this one pot dinner is ready to serve. 
It doesn’t get much easier than that.

P&B's DIY Extreme House Makeover :: Part 1 ............ DEMO: Go Big or Go Home! .............

There is a new house in the family! Our middle son and his fiancĂ© bought a house back in October  which was exciting. It is a wonderful house in a nice area however it needed a few updates which are always easier to do before move in. In fact, they hired a contractor right away to completely makeover the master bathroom. When they took us to see the house, about a week later, the bathroom project had already been started. Then, shortly after our walk through, the first DIY project began, right then and there. No time like the present!
Our tour actually ended back in the kitchen area where our attention was focussed on an odd, short little wall, covered in gray wall plank boards, that extended about halfway across the floor. It had been added at some point over the years to divide the space next to the kitchen however it did not match anything and looked out of place. We had a quick discussion as to whether or not it was useful and then, just like that, it came out. It was gone before we even thought to take a before picture. That was the beginning of reimagining what the possibilities might be to make their new house more functional and bring it up to date. 
Removing the half wall was the only project on the first day since we were not really prepared for demolition, or construction for that matter. However, we did make a wish list of projects and were back at the house the next weekend, bright and early and ready to work.
And what better way to get things started than setting up shop with a new saw. Once the equipment was assembled and tried out we were ready to continue where we had left off.  
The next thing to go was the flooring. Not in one room or a couple rooms but all of it, in the entire house, down to the subfloor. We started in the kitchen and moved out from there. While we were at it we discovered the weather stripping around the door was in need of repair so quickly took care of that and then continued working our way through the house.
Our floor removal was soon interrupted though to discuss another new idea that was brewing. What about taking out an entire wall?!
After a meeting of the minds and a little imagination it was agreed that the sunken living room was pretty small and that removing the side wall would turn the space into a great room which would provide a lot more options. So, just like that, down it came.
Once the wall was gone we got back to work taking out the floors and all of the original brown shag type carpet.
After it was all out there were a lot of nails and tack strips to remove, as well as dirt. This required scraping, sweeping, vacuuming and then repeating until we were satisfied it was as clean as it could possibly be. We were very thorough. 
So thorough in fact, that in the process we discovered other old, interesting things as we cleaned and inspected every little nook, cranny and crawl space.
Another project was moving the outlets in the garage. That required removing the lower part of wall on the interior side. It did not take long however there would be some patching to do.
As soon as the dumpster arrived we cleared out the old flooring that we had piled up in the garage, which had grown much bigger of course than shown here, to make room for the stacks of new underlayment. 
In the meantime, it was agreed that the bricks on each side of the fireplace served no purpose and were not needed so all of those bricks were removed and the floor would be extended to fill in those gaps.
The bricks were cleaned up and saved for now though, in case they are needed for any reason. Next up, installation of new floors throughout the house. I will be back soon to share an update on the floors and more in P&B's DIY Extreme House Makeover.

MEALS on HEELS :: Bake & Take ~ chicken dinner x’s 2

It was our turn again to Bake & Take a meal to our friends. As always, we make double of everything so that when were are finished cooking we have a meal for delivery and one for us. It works out great. Once all the food is ready to go we box it up and take it over however this week  I delivered it myself which the hubs dubbed Meals on Heels. Since they live right next door we just walk it over however this week he happened to have another commitment at delivery time so I was on my own, thus the new name Meals on Heels. 
The hubs had plenty of time before he had to leave to smoke some chickens which is one of our favorite ways to cook them. 
While he was at it he made three so we would have plenty of extra for other meals during the week.
In the meantime, I made a double batch of moms baked beans which are always a winner.
Company potatoes sounded good so a double batch of those were on the menu as well. 
Some warm from the oven homemade rolls were baked just before delivery.
And, little containers of homemade strawberry jam and homemade honey butter were tucked in as well. There is nothing better than either one of those slathered in the middle of one of the warm rolls. YUM.
A colorful marinated Corn Salad rounded out the meal.
It is always hard to decide on what to make for dessert but Poppyseed Layer Cake seemed to stand out. It had been awhile since I had made it and since all the ingredients were on hand it seemed like a good choice. 
It is usually a three layer cake however this time I switched it up and made a two layer cake to give away and single layer cake for us. It worked out perfect. 
There were a lot of delicious dinner leftovers which made the weeks meal planning easy. So, preparing double is actually less work for a lot of gain which is always a good thing!

Sunday Supper :: Italian Menu

The last few months of 2021 were busy with holiday festivities and various weekend events and commitments so our regular Sunday family gatherings had been put on hold. Finally this month the schedules began to clear and we were able to resume our Sunday tradition. We kicked off our first Sunday Supper of 2022 last week with an Italian themed dinner.
Our meal started with small bowls of Zuppa Toscana. We loved this soup so most of us had a second helping before dinner was served. Since it was such a hit bigger bowls might be a better choice next time. 
Homemade bread sticks were served with our crab dip appetizer, which is a favorite and quickly disappeared once  it came out of the oven,  as well as with the soup and our traditional Lasagna dinner. 
Tossed green salad with Italian dressing always pairs well with Lasagna so salad it was.
Tiramisu cupcakes topped with chocolate covered coffee beans { and a surprise in the middle } were on our dessert menu.
These amazing two layer cupcakes also have a mascarpone filling hidden in the center which is so good.
They are topped off with vanilla cream cheese frosting and a sprinkle of  chocolate and, as mentioned above, a chocolate covered coffee bean. 
Oreo Cupcakes also made it on the menu. We happened to have Oreo’s on hand so while I was at it I decided to make those too. These cupcakes have an Oreo on the bottom and one on the top and crushed Oreo’s mixed in the cupcake. If you like Oreo’s it doesn’t get better than that!
All in all, our Italian dinner was a great way to kick off our 2022 Sunday Suppers.

German Chocolate BIRTHDAY Cupcakes

These cupcakes are a favorite and are becoming a January tradition. 
Mr. Wonderful was meeting one of our friends for coffee which happened to also be his birthday so I made a batch of cupcakes to send as a fun surprise. We know that he loves German Chocolate dessert because I was asked to make these same cupcakes for a surprise birthday party for him several years ago.
It was only half a batch this time, which still made a dozen cupcakes, so there were plenty to share with their staff if they didn't all disappear before he got back to the office.
The first batch of cupcakes for 2022! May there be many more!!

Bake & Take :: Pork Loin Dinner x's 2

What better way to start off the New Year than making two meals at once, then, package one up to deliver to friends and have your own dinner ready at the same time. It really works well and we have been doing it for several months now.
This time it was marinated pork loin so that was started the day before delivery. 
Apples, dried cranberries, and some assorted nuts and seeds were tossed with shredded brussels sprouts and cabbage along with a honey mustard vinaigrette dressing to take as a side. 
Once the salad was marinating it was time to make some bread. It didn't take long to stir it up and set aside to rise which left just enough time to assemble one more salad.
This bow tie pasta salad is easy peasy and oh so good. 
It is best to make it ahead as well to be sure the flavors have a chance to meld. 
Then for dessert it was Chocolate Lush which is so simple to make and has been one of our family favorites for years. In fact, our grown kids still ask for it.
So TWO pans of dessert it was!
Hopefully they liked it as much as we do.
Everything was finished, packaged up and ready to go on time.
I love when a plan comes together.
