Aziz Hummus

I recently made a batch of hummus and served it with pita bread as an afternoon snack. The recipe I use is one my mother was given by a friend in Maui which she shared with me. Our family loves hummus and this is such a simple recipe.
I like to add a little olive oil on top along with some spices and various toppings to change up the flavor.
Easy Peasy.

Birthday Dinner { Gluten~Free Sunday's}

Last Sunday we celebrated our middle son's birthday with a Birthday Dinner full of some of his favorite foods. The menu included marinated pork loin with homemade honey mustard, rice and black bean salad, kale and carrot salad and cornbread. 
The Kale & Carrot Salad shown below was a new recipe I tried from New Seasons Market. It was easy to make and very good. The dressing had a kick to it which surprised us at first but we really liked it. It was full of flavor and I decided I could always cut back on the cayenne pepper if needed however we tend to like things a bit on the spicy side.  The only change I made to the original recipe was adding some avocado so other than that I followed the recipe.
The Birthday Dinner was completely Gluten ~ Free
except for the 
Oreo Cookie Cheesecake
{ another one of his favorites! }
however,
the Chocolate Birthday Cupcakes 
were 
gluten ~ free.

Portuguese Easter Bread

This is an amazing sweet bread that I usually only bake once a year for Easter. The round loaves contain a hint of cardamom and the crumb topping includes a smidgeon of nutmeg. 
This bread is a family favorite!

Lemon Curd Mousse { gluten ~ free } & Lemon Coconut Ball cookies

Our Easter dessert menu this year included individual servings of 
gluten~free 
Lemon Curd Mousse. 
The glasses are filled with a layer of lemon curd on the bottom followed by lemon poppy seed mousse and then a dollop of whipped cream topped with a fresh raspberry and a mint leaf. 
They were delicious!     
I also couldn't resist making a batch of sweet little frosted
Lemon Coconut Ball cookies.
