Progress in the Squirrels Nest

Last weekend the hubs put down the flooring in the Squirrels Nest.
He still needs to finish the stairs however he is afraid the smooth surface could cause someone to slip so we are considering a carpet stair runner. This week we did a little research on stair runners and are leaning in that direction. Once we see what is available we will make our final decision which means until then the stairs are on hold.
In the meantime, he has cut and painted the base molding and it is ready to install. It should give the room a nice finished look.

Sweet Treats { week 3 LID }

Over the weekend I discovered that Homemade Angel Food Cake is okay on the low iodine diet as long as non-iodized salt is used so I decided to make some mini bundt cakes.
Since I was cracking and separating eggs I went ahead and cracked a few more to make Meringue Cookies as well. 
While the cookies baked I mixed up the Angel Food cake batter. It made more than enough 
to fill the bundtlette pan so I put the extra in a tube pan.
I believe we have plenty of goodies for the week but Angel Food Cake is a favorite around here so we'll see how it goes!

Chicken Avocado Salad - { LID week 2 }

Last night was Girls Night for dinner so we decided to make our favorite Chicken Avocado Salad since it met all the Low Iodine Diet requirements. 
The chicken is broiled, chopped into chunks and tossed with lettuce, tomatoes, green onions, cilantro and lime juice. It is always so tasty and easy to make. Definitely on our favorites list, including LID!

Squirrels Nest Project ~ update

Progress is being made in the Squirrels Nest.
The walls have been textured, primed and painted.
An additional light fixture was installed to make sure the corners have enough light. 
The subflooring is down so now it is just a matter of choosing the type of floor we want. The Squirrels Nest used to have carpet which made it very soft and quiet. A nice surface for a playroom however it will now be used for storage so we will be looking for something smooth, durable and easy to install. It should not take long to decide so I should have another update soon.

Pasta Night ~ { LID week 2 }

Last night was pasta night. I made a vegetable Spaghetti Sauce recipe from the Low~Iodine Cookbook by Thyca and served it over pasta. 
Earlier in the week I found Egg and Salt Free pasta which was very exciting since it met all the LID requirements. I even remembered to boil it in distilled water this time so we are making progress. 
The leftover focaccia bread and salad rounded out our dinner.  One person did cheat a little and put parmesan on top of their pasta but I won't mention who. It has been harder than I thought to go without milk products and has made me acutely aware of just how many things contain milk.
The pasta and sauce was not quite as good as our regular spaghetti but it wasn't bad, just different. It was filling though and added some variety to the menu which helps.

We have a winner! ~ LID diet week 2

Week 2 of the Low Iodine Diet is off to a good start. The hardest thing to remember is not to use tap water. Other than that we are getting into a routine. Last night I made two new recipes; Wacky Cake and Focaccia Bread.
Apparently Wacky Cake has been around awhile. In fact, I read in one place that the recipe dates back to the depression era.  The recipe is also in the Low ~ Iodine Cookbook which can be found at www.thyca.org. The cake is easy to make and turned out great. 
It's true, bad habits are hard to break and I cannot seem to break the habit of getting water from the kitchen sink! I made focaccia bread for Sunday Supper and discovered I had used the wrong water again just before it went in the oven. Oops! I felt so bad I made a second one yesterday, this time with distilled water.
They both were good but only one met the LID requirements. Now we all can eat focaccia bread.
The bread was also good for sandwiches. A nice change from the crackers.

Eat This ~ No That! { LID Diet week 1 }

The first week of the Low Iodine Diet turned out to be a bit more difficult than I first expected. In spite of our advanced planning and careful preparation it became apparent very quickly how limited the list of approved items really is. The first few days went well with only a few minor items we had to remove from our intended meal plan and in return had some success finding a few unique, hard to find food items on the list which replaced the removed items. Then came Friday. I had big plans to make a new and flavorful LID dinner so at 3:00pm I put on my apron and began what I thought was a going to be a welcomed surprise. First up: Black Beans & Rice.
First I prepped the dried beans and once they were ready I put them on to cook. While the beans cooked I started on the comfort food. Since both recipes required eggs, and the egg yolks are restricted, I made sure to use only the whites. So far so good. 
Everything else appeared to pass all other restrictions so I finished mixing up the batter, put it in the pans and into the oven to bake. Soon we would have fresh loaves of carefully made and slightly altered Banana Bread.
The finished bread looked right and smelled wonderful so while it cooled I proceeded to make the Oatmeal Raisin Cookies. 
Again I omitted the egg yolks and used egg whites only and since my recipe calls for flake coconut I made sure I checked the ingredients and discovered I had to leave that out. No Problem. The raisins and pecans were okay so I finished mixing up the cookie dough and put them in the oven. While they were baking it was time to tend to the black beans and as I was turning around I noticed a gallon of Distilled Water on the counter. There is always one there to use and also serve as a reminder that it is the only water that can be used in cooking. Unfortunately I completely forgot and cooked the black beans in tap water instead.....UGH! Not all was lost though. The beans can still be used for something else, just not for the strict Low Iodine Diet.
Miss E arrived home just before the cookies came out of the oven.
She was so happy to see all the new food choices but before she got too excited we double checked the recipes and ingredients. Since milk products are not approved, including butter, I used recipes that used shortening instead. The problem was I only looked at the Sodium content. I did not realize that Soy products are also restricted which meant that she could not eat the bread or the cookies.
Thankfully I did have some successes during the week including something new that she could have for a snack....

We also found not one but two flavors of
Sorbet which is on the approved list.
We had checked at least 5 different places during the week without any luck but she finally found it on Friday
Saturday's Breakfast was a winner too.  We made homemade hash browns with Yukon Gold potatoes. The only restriction was they had to be peeled. 
Then, to complete the breakfast, an Egg White Omelet filled with sautéed vegetables. And, of course, coffee made with distilled water. 
They were all easy to make and...
tasted great!
We have stocked up again and are ready for Week 2. 
Hopefully the cooking this week will go smoothly. I found some new recipes to try that look promising so now it is just a matter of checking and remembering to use the right ingredients.

Welcome to the Squirrels Nest

A few weeks ago we finally started a home improvement project we have been talking about for years; Finishing and reorganizing the Squirrels Nest {aka: attic}. In case you were wondering about the name,  the "Squirrels Nest" is the name of one of my favorite rooms in my sorority and it seemed fitting so naturally I named it that. Miss E was really little then but years later she went to the same college as we did and became a member of the same sorority and loved the Squirrels Nest too. 
When the hubs built the 2 story addition to the end of our house many years ago he finished the attic space so that we could use it for storage however it ended up primarily a playroom. He laid carpet, installed lights and added shelves for books and storage. It was great and the kids loved it but they grew up and now it is time to sort through the toys and reorganize the space. 
First we had to remove everything which was a job in itself. He moved it all to one of the spare empty bedrooms, which he just finished painting, and we have slowly started sorting through it.
In the meantime, the hubs has been working in the Squirrels Nest everyday and the project is moving along. He is a man with a plan and he moves fast. 
He textured the walls yesterday however they were still drying last night so once it is dry I will update the progress.

Grilled Lamb Dinner ~ LID week 1

The grilled chicken from Monday lasted several days since Papa Bear grilled extra however last night we were ready for a change. 
He grilled lamb chops with rosemary which was really good. We opted not to marinate it as usual just to be on the safe side.
We also roasted some small red and white potatoes and made some fresh Pico de gallo and an Avocado Salad with fresh squeezed lime juice. These are not sides we usually serve with  a lamb dinner however we had to get creative since our choices are limited. 
Good News! We finally found some crackers that will work in place of bread products. I hope to try a bread recipe from the ThyCa Cookbook this weekend but this is a good addition. 
PS...I have been told these crackers are really good with avocado!
