A couple weeks ago we heard a rumor that there was a shortage of turkeys for Thanksgiving. At first glance that did appear to be the case so our search began for an alternative, and it did not take long.
We had considered ham until it was suggested that we serve Cornish Game Hens. Never would I have thought of that as I had not eaten or cooked it before, but, it did pique my interest right away. Visions of little Cornish Game Hens stuffed with dressing and served on a large beautiful platter on Thanksgiving Day was gaining ground as the centerpiece of our menu. However, the practical side of me was thinking it would be best to try making it beforehand just to be sure it was the right choice.
So, we bought two small Cornish Game Hens, stuffed them with traditional dressing, set them on a bed of sliced onions, added some oil and seasoning and then put them in the oven to bake.
Rice is always good with poultry so we had that too along with some steamed fresh vegetables.
The Cornish Game Hens were delicious and so easy to make! An ideal dinner for one person, a couple or even a crowd.
We will definitely make them again!
As for Thanksgiving, about a week ago we found plenty of turkeys at the market so we will stick with our original plan and save the Holiday Cornish Game Hen idea for another time.
