We actually celebrated Cinco de Mayo yesterday to fit in with our busy weekend schedule and even then there were last minute changes which left only three of us for dinner last night

I switched gears, revised the menu and scaled back on decorations for a small and simple but festive
fiesta.
It was perfect!
