Cream Horns

These pretty little Cream Horns were on my December baking list, however, I had not found time to make them until yesterday. They are relatively quick and easy to make and were the perfect last minute dessert to make for a spontaneous dinner party a friends house.

To achieve the cone shape for this fanciful dessert I really needed metal horns however, I only had one, so I made the rest out of tin foil which worked fairly well.
These pretty little Cream Horns were fun to make,  very easy to serve,
and they are so good I might make another batch for New Years!

December Baking

So much baking to do,
So little time!
My baking wish list is always so much longer than the amount of time I actually have available to get in the kitchen to make sweet treats however I did squeeze in some time to make a few favorites. 
There are still some recipes on my wish list so hopefully I will find time to squeeze them in over these last few days of December!

Game Day ~ appetizers

Last Saturday was the CIVIL WAR football game between the 
Oregon State Beavers and UofO Ducks.
Since we watched the game at home I made up a few quick and easy snacks.
These Tator Tot Bombs were a request from our youngest son and I just happened to have all the ingredients on hand. 
I also happened to have a few extra divided containers on hand which I purchased last week to use as take home containers for leftover Thanksgiving dinner. They worked great as individual chips and dip holders while watching the game. 

{I also filled one of these handy dandy divided containers with homemade Pumpkin Pie and Whipped Cream to send back to college with Miss E which was perfect!}
These yummy treats below were supposed to be served as an appetizer on Thanksgiving. I had actually made the filling on Wednesday evening and then forgot about it until after everyone had left after Thanksgiving dinner.  It wasn't  until I was putting away the last of the leftovers that I discovered it in the back of the refrigerator. We had had plenty of appetizers on Thanksgiving so it is no wonder I didn't miss it.
However, I really was quite pleased to have something already mixed up and ready to bake which saved on time and clean up.  These Spinach Bacon Cheese Puffs were delicious and they turned out to be a perfect addition to our Game Day snacks. 
It was a good day of football and a 
GREAT day for the Beavers!

Our big CIVIL WAR football game is today so I wanted to get a few photos from Thanksgiving posted before kick off. In addition to our traditional Thanksgiving menu I made a few new appetizers and desserts which are picture above. I hope to be back soon with a recipe or two.

Birthday Baking Blunder

Frustrating or Funny?
Well, it was actually pretty funny!
I was busy multi tasking in the kitchen and wasn't paying attention to the top of my decorating bag while I was writing the message on our youngest sons birthday cookie cake. I had finished the words and was focussed on how I wanted to fill in the extra space when all of sudden a huge blob of frosting dropped right out of the 
TOP of the bag....UGH!
It took me 2 tries to repair the damage
and
I don't think anyone would have be able to tell
if I hadn't told them.

Halloween Cupcakes {ghosts & spiderwebs}

Last Sunday I made a big batch of cupcakes to share the next day for Halloween. Since I was short on time I knew I needed to decorate the tops with something quick and easy so I made half with cute little Ghosts and decorated the remaining cupcakes with fun Marshmallow Spiderwebs. After looking at the spiderweb cupcakes for little bit it just seemed like they needed a little something more so I added the candy pumpkins since I had them on hand.
Easy Peasy! 
Next time though I think I'll go for spiders.

SWEET Saturday

I thought it would be fun to post my October sweet delights together since I didn't get all of them posted earlier this month.
So here is a little 
OVEN LOVIN' EYE CANDY
to start your weekend!
I made this double layer Tres Leches Cake to take to an October dinner meeting. It was good but not great however I don't think it was the recipe necessarily. I am guessing it was due to the lack of time I had to let the milk mixture completely soak into the cake. I think I will try again when I have a little more time. 
In early October my sister had a family Coffee Klatch and I brought an assorted tray of homemade goodies to share which included pumpkin mini muffins and two types of Pumpkin Cream Puffs as well as a fresh apple cake, warm from the oven, each serving topped with warm brown sugar sauce { I was in a hurry that morning and did not get a picture of the apple cake }. The cream puffs with the icing drizzle were made from scratch and have a Pumpkin Curd and Maple Whipped Cream filling. The cream puffs sprinkled with powdered sugar were filled with a Pumpkin Cream and were the favorite of the two. 
A couple weeks ago I made Gingerbread Cake for Sunday Supper dessert. I used one recipe to make both a regular bundt cake and several gluten free bundtlet cakes. It worked perfectly.

CHILI COOK~OFF

Last weekend I had a Sunday Supper request for homemade chili. That sounded perfect for a wet fall weekend so Miss E  and I started planning a little Chili Party.
 Well, Mr. Wonderful heard us talking on Saturday about our chili party menu and announced that he wanted to make a pot of chili too. He knew he wanted his chili to be extra spicy and was going to use chunks of beef but wasn't sure what else he was going to put in it at that point. By this time I decided we needed a chicken chili too and naturally, with 2 cooks in the kitchen, it quickly became a fun 
Chili Cook~Off.
We had Brats smoked on the Traeger with or without buns, rice, homemade gluten free cornbread mini muffins and also garlic french bread for our sides. The toppings included green onions, cheddar and pepper jack shredded cheese, avocado's, sour cream and of course mustard for the Brats. 
We had 3 Chili's in all.  Dad's Spicy Chili had chunks of beef, beans and lots of spice {and was gluten free}. I made a Spicy Chicken Chili with beans and tomatoes { also gluten free } and my thick and spicy meat and bean chili. We served the chili in mugs since they were just the right size for sampling. 
For dessert I made a Pumpkin Silk Pie with a Gingersnap Crust made with my homemade gingersnap cookies. YUM! For a gluten free version I omitted the crust and served the gluten free Pumpkin Silk Pie filling in a ramekin. Easy Peasy!
