Sheet Pan Chicken Fajitas ~ medically restricted diet ~ Part 2

Cooking to satisfy diet restrictions has recently expanded from occasional gluten free dishes, mainly on Sundays, to medically required food omissions. The most recent restricted diet covered the last two weeks of June and garlic was the main ingredient that had to be omitted. I had no idea how much garlic I actually cook with on a daily basis until I had to eliminate it. This proved to be a bit of a challenge but I got the hang of it with only a few gentle reminders and a couple close calls along the way. Since most canned and prepared foods come with some form of garlic already added the best way to avoid it was to cook completely from scratch with all fresh ingredients. Chicken Fajitas were one of the easy and tasty meals to make without garlic.
Fajitas are also quick to prepare and clean up is a cinch. 
PS...we are off the "garlic free" diet now andback to our traditional fajitas which include a good helping of garlic. 
Either way ~ we love fajitas!
