St. Patrick’s Day ~ recap

The last couple days have been holiday decoration transition days. Easter is right around the corner this year and there is no time to waste. St. Patrick’s Day decorations are in the process of being packed away and replaced with the rest of the Easter decor so I thought it would be a good time to share a few more highlights of our St. Patricks Day fun since it has been a busy week and I wasn’t able to get to it earlier.
While Miss E was here last week we made our favorite frosted sugar cookies. We were limited on time so decided to keep it simple and used a couple round cookie cutters to cut out the cookies and then frosted them with butter cream frosting, tinted green for St. Patricks Day and topped with sprinkles.
It doesn’t get better than that! We packed up half the cookies for her to take home since she was leaving the following day. Speaking of dessert, I also made some mini Pistachio Mousse Parfaits to have after our St. Patrick’s Day dinner because the cookies were going fast.
It was a small batch since it is just the hubs and me. Six seemed like plenty for the two of us.
A few rainbow sprinkles and a chocolate coin on top made them extra festive.
It might appear that we had dessert first or maybe only dessert and I must say dessert anytime is fine with me, however, we did have a traditional St. Patrick’s Day dinner to start things off.
Corned Beef, Cabbage and potatoes is always the menu and because we only have it once a year it is a special treat.
There was one other small project that was quick and easy. Our hand sanitizer got a fun holiday related update. It took a day or two to figure out what to do but I finally decided to keep it simple and made a band to go around the middle. I cut a little piece of burlap and attached some of the same green ribbon I used on the Leprechaun Hat and then sewed the band together in the back. Once it was slid into place on the jar I attached one of my little DIY labels. Easy peasy.
That about covers it so I think that’s a wrap for St. Patrick’s Day 2021.

Happy Friday!

DIY: Leprechaun Hat & Pot of Gold

Most of the snow has finally melted, although some of the big piles still have a ways to go before all of it is completely gone.  Nevertheless, it is beginning to feel like spring so last week I began putting out a few St. Patrick’s Day decorations. Just enough to look a bit festive before I switch it completely to Easter.
While I was working on some of my spring cleaning I happened to find some small red clay pots with gold glitter that I had saved from another project and thought they would make cute Leprechaun hats.
To make the project really easy I decided to use some leftover spray paint. Unfortunately I did not have any green so decided to use black instead.
Once the paint was dry I needed some green ribbon to make a band and found this perfect piece in my recycled ribbon stash. The backside did not have any printing which is just what I needed.
Then all the little hat needed was a buckle which I made with a little scrap of card stock. Such a quick and easy project.
Next up was a pot of gold. I was recently given a bag of wonderful gold buttons and thought they might be a good substitute for gold coins.
I grabbed one of my black cauldrons and filled it with some of the buttons.
It worked great and is a fun and unique way to display and enjoy the wonderful gold button collection.
Just a couple simple ways to decorate for St. Patrick's Day using recycled and repurposed items around the house.

Happy Monday!

St. Patricks Day dinner & dessert

Saturday was a snow day which was very fun and also grocery shopping which became try again another day, and another and finally yesterday the hubs timed it just right and was able to get most of the things on the list. Church on Sunday was virtual and Monday turned into working from home with the hubs for the week. A lot of changes over a few days however one thing that was the same,  St. Patrick's Daywhich was of course yesterday.
A few green and gold decorations made the table festive.
We had corned beef and cabbage for dinner as we almost always do
Since we have not been able to find certain grocery items lately I have been changing up our menu so that it uses things I have on hand.  Well, it just so happened that I had everything for this easy Icebox Cake parfait however, after I made the first one I was running short on time so I decided to go the easy route instead...
...and made a small traditional Icebox Cake on a platter with the rest of the ingredients. It is yummy any way you serve it.
I actually made the Icebox Cake on Sunday for Sunday Supper knowing that there would be leftovers for our St. Patrick's Day dinner. It worked out perfect and now we will have delicious leftovers for at least a couple more days.

Happy Wednesday!

Rainbow Cupcakes

For our St. Patrick's Day Sunday Supper I wanted to make a special dessert to go with our traditional Corned Beef and Cabbage meal.
I decided to bake a small batch of festive Rainbow cupcakes which were easy and fun to make. I used my favorite chocolate cupcake recipe, made simple buttercream frosting and used candy for decoration.
It doesn't get easier than that.

Happy St. Patrick's Day!

St. Patrick's Day Dinner

Corned Beef and Cabbage is our favorite
St. Patrick's Day dinner.
This year, however, I added fried cabbage to the menu and we loved it.
I really wanted to make a festive dessert to complete our holiday meal but we still had some leftover chocolate cake and a few more lemon bars to finish. That's OK, because I plan on baking something sweet and yummy for Sunday Supper tomorrow anyway.

🍀 Happy St. Patrick's Day! 🍀

sour cream LIME tart

This Sour Cream Lime Tart was our St. Patrick's Day dessert on Sunday. I added a couple drops of green food coloring to the filling to give it a little more color. It wasn't quite the shade of green I was going for but it was still festive and a delicious end to our traditional corned beef and cabbage dinner.

Happy Spring!

Rainbow Sugar Cookies

I made these festive cookies for St. Patrick's Day but I think they would also be fun for a party with a Rainbow or Tie-Dye theme.
To frost or not to frost??
We LOVE frosted sugar cookies but frosting would cover up the colorful rainbow design so decided to go without this time.
